A tésztához:
- 1 tojás
- 35 dkg liszt
- 12 dkg margarin
- 12 dkg cukor
- 2 ek tejföl
- késhegynyi szódabikarbóna vagy sütőpor
A töltelékhez:
- 2 tojás (külön választva a fehérje és a sárgája)
- 1/2 kg tehéntúró
- 1 vaníliás cukor
- 15 dkg cukor
- 1 ek gríz
- 1 citrom reszelt héja
A rácshoz:
- 4 tojásfehérje
- 10 dkg cukor
+ sárgabaracklekvár
Így készül:
- A tésztához valókból ruganyos tésztát gyúr, amit egy kivajazott-kilisztezett tortaformába nyújt. (kicsiny konyhám továbbra is 24cm átmérőjű csatos alkalmatossággal operál, hiába lett azóta nagyobb sütőm egy egészen másik lakásban :). 200 fokra előmelegített sütőben a tésztát 12 percig elősüt, majd kivesz.
- Közben elkészít a túrós rátétet: a tojássárgákat a cukrokkal fehérre kever, majd hozzáad a túrót, a grízt, a citromhéjat -- végezetül óvatosan beleforgat a habbá vert fehérjéket. A masszát az elősütött tészta tetején szépen elegyenget.
- A lekent tésztát visszatesz sülni 12-30 percig (én megvártam, amíg a túró teteje itt-ott egészen halaványan megpirult, hogy ne maradjon folyós a massza középen sem, de a hivatalos recept szerint 12 perc a sütési idő ennél a fázisnál is).
- Közben a rácshoz a fehérjéket kemény habbá ver a cukorral.
- Mikor letelt a sütési idő, a cukros habot zacskóba tölt, sarkán nyílást vág, és szépen berácsoz a sütemény tetejét. Amikor ez megvan, a mű visszakerül még pár percre a sütőbe, hogy a rács épphogy csak megpiruljon.
- Kivesz, és a rácsok között sárgabaracklekvárral töltöget. (Elvileg ez már a finish, de én még két percre visszaakolbólintottam az egészet a sütőbe, hogy picit összekapja magát a lekvár [anyukám házija idén nyárról :)], mert nagyon folyós volt.)

There were days when I prepared this cake on a quite regulare basis and it has been years since I last used the recipe. But this Christmas I made it as a present for someone I swore never to bake for. :D
Ingredients for the crust:
- 350 g flour
- 120 g margarine
- 120 g sugar
- 1-2 tbsp cream (Hungarian "tejföl")
- 1 egg
- a pinch of self-raising flour
For the cream:
- 500 g cottage cheese
- 2 eggs (separate yolk from white!)
- 1 tbsp semolina
- 1 pack vanilla sugar
- 150 g sugar
- 1 lemon's grated peel
For the top:
- 4 egg whites
- 100 g sugar
- apricot jam
This is how we do it :D
- First you preapre the crust: mix all ingredients, bake it into a springy dough and put it evenly in a cake form (mine is 24 cm in diametre) -- bake it at 200 degrees (Celsius) for 12 minutes.
- Meanwhile prepare the cream: add the sugars to the yolks, mix them until the mixture is almost white. Now add all the other cream-ingredients (semolina, cottage cheese, peel of lemon) and mix them thouroughly. Beat up the egg whites, and gently mix the foam into to cream.
- Take the pre-baked crust out of the oven and put the cream on top evenly. Now put it back into the oven for another 20-30 minutes (I waited till the edges started to get this nice rusted colour ;)
- In the meantime, prepare the topping: beat the 4 egg whites with the sugar hard. Open apricot jam.
- When the cake is baked (cream and all), pour the egg whites into a sack, cut off one corner, and start drawing a grid on top of the cake.
- Put it back for another 3 minutes so that the grid pattern receives a light brownish, baked colour.
- Take it out for the last time, fill the gaps in the grid with apricot jam. (Since my jam was very liquid, I put the cake back for another few minutes so as to get the jam more consistent ;)
