És megkezdtem a második diétás hetet -- juhúú! Az egyetlen dolog, amit néha megkívánok, és szigorúan nem tartozik az ehető/iható dolgok listájába az a meggyes piskóta. De lesz még olyan is, hogy megint eszek gyümölcsöt, cukrot meg tésztaféléket, majd akkor pótolom! :)
De szóval térjek már rá a székelygulyásra. Merthogy mint kiderült ezt eredetileg így hívják. :) Piaci vásárfia gyana kaptam fél kiló savanyúkáposztát; volt itthon csirkehusi; már csak a gerslit kellett beszerezni hozzá (a lisztes-tejfölös habarás most átment tabuba... ugye... egy időre. :P)
Egybevetettem a horváthilonás, az efnagyangélás és a netes verziókat -- mindenki mindenben egyetértett, én meg külön örültem, hogy már megint olyat csinálok, ami hamar elkészül. :D
Kell hozzá:
- cc. 1/2 kg csirkemellfilé
- 1 nagy fej vöröshagyma (olvastam valamelyik változatban, hogy lilával is adja!)
- 35-40 dkg savanyúkáposzta + lé
- 2 marék gersli (= árpagyöngy = hántolt árpa)
- só
- pirospaprika
- víz
- kókuszolaj (vagy bármilyen más zsiradék, ha épp nem diétás a hangulat)
Így készül:
- Nagy hőálló edényben a zsiradékot megolvaszt, közben hagymát megpucol és felkockáz, majd a bő zsírban, mérsékelt lángon és pici só hozzáadásával üvegesre párol.
- A csirkét megpucol, megmos és felkockáz, majd az üveges tekintetű hagymákhoz ad.
- Ízlés szerint sóz, és addig süt kis lángon, amíg minden irányból fehérek lesznek a húskockák.
- Ekkor jól megszór pirospaprikával, összekever, majd hozzáad 2 marék gerslit és a savanyúkáposzta + lé kombót.
- Vízzel felönt úgy, hogy éppen ellepje.
- Fedő alatt mérsékelt lángon puhára főz (kb. fél-1 óra).
Ha nem valami brutál diéta közepén vagyunk, tejföllel és kenyérrel tálaljuk. Ha viszont igen, akkor... én kölesgolyót ettem hozzá :D
Hozzátartozik még az nagy igazsághoz, hogy az igazi székelygulyás (alsó hangon) sertéslapockából készül füstölt csülök hozzáadásával, esetleg némi fokhagymával és egy kis szem paradicsommal még a legelején. Sok helyütt pedig tejfölös habarással sűrítik az ételt, nem pedig árpagyönggyel. De majd egyszer ilyen poszt is lesz, remélem. :)

Toen ik op zoek was naar een Engelse naam voor deze gerecht (op 't internet), één van de eerste resultaten was een nlse kokenblog -- er was niks in het Engels :S , maar ik vond dit: "Stoofschotel van varkensvlees met zuurkool" -- all my due respects! :D Dus ik heb dit naar het Engels vertaald (met "kippen-" in plaats van "varken-") Ik denk het leuk is dat voor het eerste keer in de geschiedenis van m'n blog (die tweetalig is zodat jullie ook ervan profiteren kunnen :) vind ik een nlse definitie terwijl ik op zoek ben naar een Engelse naam of omschrijving -- en als eerste zoekresultaat! :)
And now we're back in English! Székely goulash of székelykáposzta is a traditional Hungarian dish which (as a book on the history of Hungarian cuisine suggests) has nothing to do either with the Székely or with Transylvania. Rumour has it that back in the 1830s one of our most famous national poets (Sándor Petőfi) went out to dine with a good friend of his, János Székely. When they arrived at their favourite inn, there was not much food left (so late did they arrive), so Székely ordered the inn-keper to mix the left-over sauerkraut with the left-over pork goulash. The dish turned out to be so tasty that next time Petőfi went there, he already ordered "Székely's goulash".
And now that I perhaps raised your expectations, I have to admit that my version is a dietary variation on the theme, since I am still on a rather strict diet... Yet, if any of you got inspired by the original székelykáposzta, at the end of the entry I'll give you hints about how to prepare it in an old-school fashion ;)
Ingredients (for 3-4 persons):
- 600g chicken breast fillet
- 800g sauerkraut
- 1 onion
- 2-3 handfuls of pearl barley
- red pepper (powdered)
- salt
- water
- coconut oil
Preparation:
- Preheat oil (low heat) in a big casserol.
- Peel and chop onion, add to oil, add a pinch of salt, and cook until soft and glassy.
- Clean and wash meat. Chop into smaller squares (cc. 1.5 cm3).
- Add to onion and cook until white on all sides.
- Now add a few tbsp of red pepper and 0.5 to 1 tbsp of salt.
- Add sauerkraut and pearl barley.
- Pour so much water into the casserol that it almost covers the top of your sauerkraut-chicken-pearl-barley mixture.
- Cover it, and cook until ingredients are soft (from 30 min to 1 hour).
If you are not on a strict diet, you serve it with fresh & cold sour creme (actually, with Hungarian TEJFÖL which is not the same as cream or sour cream -- unfortunately, I have not yet found this sort of diary product on my trips to West of Hungary...) and a slice of bread. ;) If you are on a diet like I am... then you might perhaps consider millet balls... :)
If you wish to go traditional, you want to prepare it with pork instead of chicken, and a piece of smoked knuckel meat. You preheat oil, prepare the onion, add a tomatoe and a few cloves of garlick as well, then you add the knuckle and wait until it lets out its juices. Now you add the pork and follow the respective instructions above. Instead of pearl barley you might also thicken the dish with sour cream (tejföl) (350-400 ml ) mixed with flour (2 tbsp) and 200ml cold water (be careful to stir it until there are no lumps in it any more). I hope some day to be able to dedicate a full entry to the original "székely goulash" because I know from experience it can be super yummy :)
